Flavorful Holiday Cooking is Made Easy with Vanilla Products


Creating delicious holiday recipes is easy when you take

Summer has come to a close and now it is time to think about fall, and that means thinking about the holidays too. It is when
we take most of our cooking from outdoor to indoors, again taxing our ovens and cooktops, and endlessly searching for new recipes to explore. Although there is something to say for the feel of fall in the air and the foods that we associate with it – it instills a bit of comfort in us all. Whether it is preparing a casserole or slow-cooker meal for weeknight meals on the run, or whipping up a favorite dish to take to a family gathering, making sure it tastes great is first and foremost on our minds.

Nielsen-Massey Orange Chicken Bake
Serves 4-6

This elegant, yet quick and easy dish is ideal for a last minute dinner party.

1 (3/4 pound) Roasting Chicken
Salt and pepper chicken and place in an ovenproof casserole dish
Combine:
1 cup dry white wine
1 teaspoon Nielsen-Massey Pure Orange Extract
1/2 teaspoon all-season salt
1/4 teaspoon garlic powder
1 teaspoon dried Rosemary
2 tablespoons finely chopped shallots
Baste chicken with marinade mixture and place it in a 375° F oven. The chicken is done when a thermometer is inserted into the chicken's thigh (not touching the bone) and reads 160° F - 170° F. Cover chicken with foil if it begins to brown too quickly. While chicken is roasting baste frequently. Serve with steamed carrots.

When it comes to experimenting with new recipes though, one is often apprehensive to venture out too far. We are by nature creatures of habit and like to play it safe, and stick with what works. You may be the one who is always in charge of bringing the famous sweet potatoes to Thanksgiving or the cookies to the holiday party, or cupcakes to the school bake sale. Well, this year you are in luck, you can try something new, or you can take a new twist on your tried and true favorites. That’s the wonderful thing about Nielsen-Massey vanilla products and the new flavored extracts – they can add flavor and flare to an already great recipe and everyone will wonder how you made it so extraordinarily delicious this year!

Nielsen-Massey Green Beans with Vanilla Balsamic
Serves 6-8

This delicious dressing can also be used on asparagus.

1pound fresh green beans, trimmed
1/4 cup onion, diced
1/4 cup red bell pepper, diced
1 tablespoon good-quality balsamic vinegar
1 tablespoon good-quality olive oil
2 teaspoons Nielsen-Massey Madagascar Bourbon Pure Vanilla Bean Paste
dash of salt
Steam or microwave the green beans, onion and red bell pepper until the beans are tender-crisp. Combine the remaining ingredients in a small measuring cup or cruet. Arrange the green beans on a platter and drizzle the vinegar mixture over all. Can be served warm or at room temperature.

Next Generation Takes Ownership

As of July 31, 2006, Nielsen-Massey Vanillas is under new ownership. True to its name, it is and will remain a family owned
business. Camilla Nielsen’s three children; Craig, Beth and Matt Nielsen, have proudly taken ownership of the company.

Baking with Vanilla Means Bringing Out the Kid in All of Us

Thanksgiving at Grandma’s house, holiday work parties, Aunt Kathy’s cookie exchange...there is a lot of baking to be done at the holidays. But it doesn’t have to be work – it can be fun for the whole family!

Why not start your own traditions with your family, your friends and most of all, your children? Most likely kids will want to “help” mom or dad in the kitchen if they feel they have an active role or an important (and most of all fun) job to do. And instead of shooing them off into the living room to watch T.V. have them grab a stepstool, roll up their sleeves and lend a hand. This is the opportunity to combine some holiday fun with baking lessons for the kids.

Nielsen-Massey Sugar Cookie Mix
Makes 2 batches of 2 dozen cookies

Have this easy mix on hand to sitr up a batch of homemade cookies in a jiffy.

1 cup brown sugar
5 cups all-purpose flour
4 teaspoons Nielsen-Massey Madagascar Bourbon Pure Vanilla Powder
1 teaspoon salt

For baking day:
1 large egg
1 cup butter, softened

Combine the sugar, flour, Pure Vanilla Powder and salt. Store in a cool, dry place until ready to use. For gift giving, place in a decorative jar and attach an information tag with baking instructions.

When ready to bake, preheat oven to 350° F. Beat together the egg and butter until well blended. Add 3 cups of the dry mix. and blend well. Shape dough into balls the size of walnuts and place on an ungreased baking sheet. Flatten the balls with the bottom of a water glass that has been dipped in colored sugar. Sprinkle with extra sugar. Bake until golden, about 10-12 minutes.

When it comes to baking, vanilla is an essential component to our favorite goodies. Whether you have Vanilla Powder, Vanilla
Bean Paste, Vanilla Extract or Whole Vanilla Beans in your pantry,
there is something yummy that will be made in your kitchen this
holiday season.

Vanilla Powder is ideal for adding to cookie mixes and breads – especially those prepared for gift-giving (see recipe). It is also great for colorsensitive recipes, like vanilla icings, as it will not
discolor your masterpieces. Kids might like to create a special gift for a teacher such as a cookie or brownie recipe all in one jar. They can help add the ingredients, decorate the jar and really feel like they made something cool all by themselves. They can even

shake a bit of vanilla powder into some club soda or lemon-lime
soda and add a maraschino cherry for a tasty holiday kiddy cocktail all their own!

On the other hand, if a bit of real vanilla seeds is what you want to see on your bakery creation, use some Vanilla Bean Paste. It is used the same as extract, but has the tiny vanilla flecks in it that are nice in recipes to really say vanilla. And it’s great for kids since it has a thicker consistency and won’t come pouring out of the jar too fast for small hands – they can dip into the jar with a

is part of the fun of baking). Vanilla Extract is a staple in most baking cupboards. You can have them practice blending the vanilla extract and eggs first to emulsify the vanilla flavor, then add your other ingredients. And holiday baking doesn’t have to be just
desserts. Making pancakes, waffles and muffins for breakfast can be just as much fun. The kids can add a bit of vanilla extract to maple syrup, stir, and voila – they have vanilla syrup!

Use Whole Vanilla Beans to make your own vanilla sugar. The kids can add the vanilla beans to a glass canning jar filled
with sugar - use it to make cookies, cupcakes or special treats. It can be their job to keep adding beans and sugar as you gradually
use it up for baking. Little ones can also be in charge of making sure the treats are baked to perfection. Give them their own
timer, show them how to set it for the appropriate baking time and they can keep track of how long it will be until their treats are done.

Clearly, the possibilities are endless, as is the fun and quality family time you will have baking together at the holidays. Make it taste good and make it fun!

Did You Know?

An interesting use for vanilla was brought to our attention by one of our website viewers, Susan Eriksen. When she volunteered at a wildlife shelter in St. Louis, MO, she said that when people would accidentally touch baby bunnies (discovered while doing yardwork, or often found dangling – unharmed – from the mouth of the family cat) they would put a drop of vanilla extract on the head of a baby bunny’s head and place back in its nest. This masked the smell of the cat or human, and the mother rabbit would continue to care for her offspring. You just never
know where vanilla might come in handy!

Tips for Using Nielsen-Massey Vanilla Products and Flavor Extracts:
  • Madagascar Bourbon Vanilla Extract is an overall versatile vanilla with rich, mellow
    characteristics that adds a touch of sweetness to succulent seafood sauces or
    marinades and tangy tomato sauces.
  • The fruity, anisic notes of Tahitian Pure Vanilla works well when added to fruit dishes such as cranberry sauce or cherries jubilee.
  • Mexican Pure Vanilla spices up citrus fruits such as lemons, limes and oranges, while it can also mellow out the bitterness of dark chocolate.
  • Vanilla Bean Paste, with flecks of real vanilla bean, is a secret way to be able to add
    more delicious vanilla flavor without thinning out your batters or sauces.
  • If a recipe calls for oranges or lemons, try substituting or adding orange or lemon
    extract. And almond extract is ideal for making mouth-watering pastries and cookies for the holidays.
  • One Vanilla Bean is equal to one tablespoon Pure Vanilla Bean Paste, while one
    tablespoon Pure Vanilla Bean Paste is equal to 1 tablespoon Vanilla Extract.
  • Pure Vanilla and Vanilla Beans should be stored in an airtight container at room
    temperature. They should not be subjected to freezing temperatures and should be
    kept away from direct sunlight.
  • Keep in mind that vanilla can not only add flavor, but complement and enhance other flavors – don’t be afraid to use it with other flavors.
  • Technique is key to the right results i.e. add our flavors at the end of the cooking
    process - don’t abuse it with heat.
  • A little goes a long way with vanilla, how much you use is simply a matter of taste.

Nielsen-Massey First to be Gluten-Free Certified in the USA

We are proud to announce that we are

supplier in the United States to be certified
by the Gluten-Free Certification
Organization (GFCO). Soon the GFCO’s
circle GF certification mark will be featured
on our packaging, giving all our customers
the assurance that Nielsen-Massey’s fine
vanillas and extracts are gluten-free.

The GFCO is the first program of its
kind in the world to supervise the manufacturing and testing protocol of companies that market gluten-free (GF) foods, for the purpose of offering consumers a third-party assurance of safety. This new independent food processing inspection program will
