For the simple syrup, combine lemongrass, Thai chile, sugar and water in a saucepot. Bring mixture to a boil. Cook until sugar dissolves then remove from heat. Let cool to room temperature. Strain through a fine mesh sieve.
Add Nielsen-Massey Orange Blossom Water and Pure Orange Extract to mixture. Reserve for Lime Ricky.
To assemble the drink, in a pitcher add kaffir lime leaves and muddle. Add lime juice, ginger juice, simple syrup, angostura bitters and sparkling water along with ice. Stir until chilled. Pour into serving glasses and garnish with mini lime wedges and a spritz of Nielsen-Massey Orange Blossom Water.
