to one gallon of liquid. Three-fold vanilla uses 40.05 ounces of vanilla
beans, and Four-fold Pure Vanilla, the highest extraction possible using
Nielsen-Massey's exclusive cold extraction process, is the extractive
matter from 53.4 ounces of vanilla beans to one gallon of liquid. In
ice cream manufacture, two and three-fold vanillas are commonly used,
while four-fold vanillas are most often used in the confectionery business.
