LEMON HERB RICE

1 quart low-sodium chicken stock
3 tablespoons olive oil
1 cup arborio rice
¼ cup chopped parsley
1 tablespoon minced fresh rosemary
¼ teaspoon Nielsen-Massey Pure Lemon Extract
½ cup grated Parmesan cheese

Heat the chicken stock in a microwaveable cup or small saucepan. Over medium heat, heat the olive oil in a medium saucepan until shimmering. Add the rice and stir to coat. Gradually add in the hot stock, stirring with a wooden spoon after each addition. The rice is ready for more stock when the spoon leaves a clean trail in the pan. Continue cooking and adding stock until the rice is creamy and yields to a gentle bite. Stir in the parsley, rosemary Nielsen-Massey Pure Lemon Extract and the Parmesan cheese. Stir, adding more stock if necessary, to make a creamy consistency. Makes 4 servings
